Garlic and white wine prawns

I can’t really claim this recipe as my own, it’s a dish that I picked up from my Mum and one that never fails to impress! It’s perfect for summer, because it’s quick and easy with light flavours, and I often cook this for a late Sunday lunch or as a starter to a meal with friends. In my opinion, it’s best enjoyed with a crusty baguette and a crisp glass of white wine!

Serves: 4 | Time: 10

Ingredients:

2 Tbsp extra virgin olive oil 
1/2 tsp butter (optional, but helps thicken the sauce)
3 garlic cloves finely chopped 
Fresh red chili to taste
450g (1lb) prawns (remove head and de-vein) 
1 handful of flat-leaf parsley about 1/4 cup chopped
Lemon juice, 1/3 of a lemon squeezed
1/4 cup dry white wine 
Pinch of salt

Method:

  • Heat oil and butter in a deep pan over a medium heat

  • Sauté the garlic and chili until fragrant, about a minute, being careful not to burn the garlic

  • Add the prawns followed by the lemon, wine, parsley and salt

  • Sauté until pink and opaque (about 3-4 minutes)

  • Serve hot and enjoy!
