Greek lemon chicken and potatoes
Lots of garlic, lemon, olive oil and oregano - the hallmarks of a classic Greek dish. Say no more!
Serves: 4 | Time: 70 minutes
Ingredients:
4 whole chicken legs (quarters) on the bone with skin
3-4 medium potatoes
1/4 cup olive oil
4 -5 crushed garlic cloves
1 large lemon (juice of)
1/4 tsp salt and pepper
1 1/4 tsp dried oregano
1/4 tsp dried onion powder
1/4 tsp dried garlic powder
Method:
Pre-heat oven to 425f (~320 C)
Peel the potatoes and cut in half lengthways then into quarters
Trim excess skin off chicken
Juice the lemon
Peel garlic cloves and crush so they break apart
In a large baking dish toss the potatoes and chicken and garlic in the lemon, oregano, olive oil, salt, pepper, onion, and garlic powder - making sure to coat all pieces
Arrange the chicken skin side up with potatoes around
Pour 1/4 cup of water (or chicken broth) into the bottom of the dish being careful not to pour over the chicken and potatoes
Cook in the oven for 1 hour until potatoes and chicken are cooked through
If you like, place it under the broiler(grill) for a few minutes to develop colour - watch it closely!
